The current modded truck I'm using isn't just quite as powerful as I'd like and I'm wondering how I'd go about increasing it's power output and maybe its top speed too. Also, do these two factors have maximum values or are they (in theory) limitless, just curious.

Aye exactly, just like IRL where if a farmer's considering a buying a new tractor he can get a demonstrator model from the local dealer and use it for a few weeks on the job to see how it would work out for him

Another wee tip is before you buy a new tractor or harvester or other expensive bit of kit, just quickly save the game before you buy then if you don't like it or it doesn't suit then you just quit without saving. Simples.

That should probably run fs15 okay, currently using a toshiba laptop with a 2.14 GHz processor with 1TB hard-drive and 8GB of RAM and my game runs fine as long as I don't use the woodchipper!
