When crops are ready to harvest, in general how long do you have before they die?

i read somewhere in the forum 24 hours, if the growth rate is set to slow and game speed set to realtime.

It depends on the difficulty level too. Easy level takes about 24 hours, hard level is about 4 hours and medium is probably 12 hours although I haven't played at medium difficulty so I am not too sure about that one.

For wheat on medium level, I once measured it to be 8 minutes at 120x time so that is 16 hours at 1x time. The largest field #40 takes about 1 hour real time to harvest corn with 2 harvesters.
