How do I pick up the grass bales I've got the loader but don't know how to

In Play Station 3 you push L1 and you will see something like unfold loader or something like that. Once you do that, just drive along side of the bale and it will pick it up

Turn on the Arcusin Autostack and drive next to the bales to pick them up:
