That depends on the time of year. In summer it might not let you skip until after 9pm.
You also have to be on foot.

What would happen if I removed seasons from my current map? Would it mess it up a lot?

I don't think you will. There shouldn't be any problems, but to be on the safe side you might want to do it in winter

Rahklin or real logger said it is a bad idea and may corrupt the save if you remove it iirc.

My question would be if I wanted to plant your sugarcane during the seasons, when would you have to plant your sugarcane out there?
which period is recommended?

^^ You can only plant sugarcane with the Paraguay Geo. It has a planting time for it
