It's been late winter for me as the best time to buy although the price difference has been very small.
FS22 is the best one yet. Fight me!

I discovered this on accident.bought a 100 pigs,cheapest time of the year,had all my crops lined out ,i thought.Turned out i didn't have nearly enough corn.so i looked at selling some at the highest day of the year and made a nice profit on the 70 i sold.

selling/buying animals - it's actually more complicated than that
Remember - with Seasons animals don't produce at a steady rate. So you should actually also take into account where in the "production rate timescale" you do the deal so you can save on animals food.
With sheep it's relatively easy to find best selltime - highest price is in late spring and highest production rate is in spring. So best time to sell is late evening (!) of the day with the highest price - I think most of the wool (have not tested!) for that year have been produced by that time.
Buy time - look for lowest price that is also closest to "start of production period" and buy late in the evening (or in case you think it's better to by in the beginning/during production time, then early in the morning).
Different for cows (I just buy in the morning of the lowest price day and sell in the evening of the highest price day) and more complicated with pigs. Just remember that animals need feeding even on days they don't produce anything (sheep, pigs). So on these days it's better to sell early in the morning and buy late in the evening.
I just started my first Seasoned farm with pigs and unfortunately I have to say - pigs are still (after changes in production rate/periods) just not worth it They need huge investments (or leasing costs) to provide all the food. They need a lot of time (to provide all the food and cleanup). And they return just too little (compared to sheep or even just crops used as pigfood). Maybe it gets better with large scale (mine's just above 120 currently).

With cows I think are the best earners. I'm currently on my 3rd year doing them alongside with doing arable. I have gained 22 cows since my initial 100 cow start. Bought in autumn. As I wanted to make sure I had enough food for them. I look to increase them next year or two depending on if I want more fields. I currently make enough hay, silage and straw for them. And I make between 13k to £17k a day in the winter and spring.

Are solar panels affected by Seasons?? Seems they make more $$ in the summer.

No, currently that is not a feature we have. It is on our todo list but will not be coming to console for FS17.
