Foliage stand back up speed???

I was wondering if it was possible to set the speed in which foliage or plants stand back up after driving on them. If so, how?
I'd be interested to see how that would look. It would look more realistic driving over a wheat field and see a path of flattened wheat rather than a huge path of wheat that disappeared caused by fruit destruction.
