What are the possibilities to allow a phone app to access the data from the game to have a stand alone tractor computer that would work as GPS plus seed and field data ... does that make sense .. maybe willing to fund this as a concept

As a display device, it's possible if there's code creating - for example - xml data that your device is able to access and then interpret.

As an input device allowing you to click on virtual "buttons" on the device, you'd somehow need to make your devices' app a controller or input device for the computer, otherwise Farming Simulator would probably not be able to accept it's input.
