3 quick questions (hired help/zoom view/character)

Probably really obvious so sorry, but..

1) How many hired helpers can you have in FS19 (coming straight from FS15 with just the three)

2) Can you set the initial view when getting back into a tractor so that it's a good way up, giving you a wider image of the machine? I ask this, as I'm doing a mission where I'm tipping beet, and returning to the game after a save, found the camera "in" the trailer, but under the beet top level, so it appeared empty. I then switched to in-cab view and drove off, and then realised the trailer was still full! Doh! In "Options/Games settings" there's a "Field of view" setting, but this doesn't seem to make any difference. Is it even what I am looking for?

3) Once you have created a character to play as, can you change that character?
