One thing I'd like to know is what is the function of the factories in the top left of the map. I see you can drop grains there but what do you get in return?

The other sell points at the factories take silage and manure and possibly slurry I think. There is no function other than to pay you money. Not sure if get digestate as a by product of manure/slurry/silage like a Biogas Plant.

The Digestate Factory takes slurry and manure. In order for it to appear in the prices you need to buy the land at the factories, which is 27,288 to buy. Manure and slurry pay 3000 on easy, 1800 on normal and 1000 on hard economy per 1000 litres. The Digestate Factory is the one with digital readout above the sell point. Hope this helps.
