Unable buy seeds
I just started today and I’m trying to buy seed for my seeder. The shop option only has equipment, no pallets or anything

Are you playing on a mobile? If so you are using FS20 (mobile) not FS19 (gameconsoles and PC)
As for buying seeds and or fertilizer in FS20 you only can fill your seeders, planters and spreaders by the small silos at the back of your farm (the shed with silos near field 1).
