And there's probable thousands of bugs, but most have not been found yet.. Someone has to prioritize which bugs are the most critical to fix vs which bugs are a lot of work to fix vs getting resources for improvements.. And one may think one has fixed on bug, and then testing, realizing that the fix breaks other behavior, so one has to do larger architectural changes to make the code sound. (Or worst case as indicated by wheelmansteve, that testing doesn't show that you break other stuff, but that become new bugs)

And then there is of course the additional issue of managing to convert a bug report, into a reproducable known issue that they can fix, which in many cases may be cryptic. Maybe the bug doesn't appear unless you're using a given set of mods and have a given state in your savegame. This is extra hard in a game with extended mod usage.

I'm afraid the team in no way have capacity to keep on top of these, so they have to strictly prioritize what they use their time for..
