Dahl has the biggest field on console.
1300 acre farm, finish out just about 10,000 hogs a year, 200 cattle, and xbox one and pc user.

Large maps, like a 4x (4 times the size of a standard map) seem to not be allowed on consoles for performance reasons.

I would throw in Westbridge Hills. It already has quite large fields.

On most maps you can also join multiple fields to larger fields. That enables you to start small and grow bigger by the time. It depends on, if you prefer rectangular fields or not.

Nothing to suggest they'll be available on PS5 or the new XBox either. GIANTS will probably use much of the extra performance headroom for graphical improvements and increased slot counts.

I don't think GIANTS officially support 4x or larger maps. In the past there were niggles with them which exaggerated some small issues found on standard size maps (such as harvesters missing crops in some directions more than others). I've not tried a 4x map on FS19 though, so I can't comment if they still exist.

Millenial Farmer map is going to have some pretty hefty fields when released, and they've said they'll do a console version.

Flat map has no fields so you can make your own gigantor ones. Plows would be too small slow but there is that mod pack that has in game cultivators create fields. The 80 foot Flexi-Coil is in there.
Let's get some cows!
FS17 a few hundred hours on pc, 920 ps4
FS19 2660 hrs ps4/ps5
FS 22 [ps5] 1070 hrs [pc] 60 hrs

Pretty sure that mod pack isn't available on consoles unfortunately. It would be great if it was though.
