I like the idea of building a motocross track, or maybe some kind of obstacle course for a tractor! AlienJim has a map with a great obstacle course which everyone should try.

When I’m on a regular map and have time to kill I like to cut trees. The platinum expansion has some cool tree stuff that I like to use once I have the cash to afford it.

I've yet to find myself wanting to do anything other than farm on this game, and if the time ever comes in the future where I do find myself bored of farming I'll simply stop playing. Thanks to the modders I think I'll be alright lol
