Still playing Wildbach Tal on FS19.
The OXBO pack was my last hope for the Manure System. Pity I bought FS22. Will wait until a manure System will be integrated before I ever buy FS again.

It was a combination of reasons. I was doing it on the cheap with the trailed harvester because I didn't have the cash to rent the self-propelled. Poor working width and low capacity, also my trailer wasn't that high capacity either. Factor in the modded tractor I was using that kept sticking in first or second gear every so often and it all felt so much worse.
Cutting sugar beet for better money made it worse, the cutter worked fine but the only selling point for cut sugar beet was the BGA which I had to buy to use and once again didn't have the cash for. Deleted that save now because everything has been going wrong on it.

I am using the cutter and harvester from the sugerbeet harvesster pack;

Its cheap, and with 3 meter relative fast.
For picking up from the ground I dont use the convoyerbelt, but I have modify a foragewagon to pickup eartfruits.

I just used easy development tools so I could set up a field of ready to work sugar beet on another map and that setup you suggested feels like a big improvement to me over the trailed harvester. It feels workable and I'm not feeling annoyed by it every minute, its a bit awkward with follow me and the conveyor with a large truck alongside but its better than constantly unloading with the other harvester. Is there a forage wagon mod which can pick up root crops? I have no issue using that if it makes life easier. I just don't want to go super-cheaty with the Colossus Harvester.

Besides HORSCH AgroVation and Carpathian Countryside I tried Stevie's Tranquil Waters but I didn't like the map's animal parallel food, for example silage for sheep
I recently found another good map which I like a lot. It reminds me Estancia Lapacho.
