Go to downloadable content or mods from the main menu and look at the installed tab.

Are you on pc or console?

PC would it count if I had the Dlc/exp installed but not active?

I've the DLC installed but not active on my Horsch DLC save and I do not have carrots.
I disabled it, because carrots and red beet are not doable with those big fields.
Contracts with those crops are already not funny on other maps, and for sure not on the Horsch map.

There should be a option to disable certain crops on a map, I also want to turn off cotton.

Crops can be disabled, either by the map maker or by editing the growth XML file, as far as I can see it comes down to disabling the "can be planted" for the crop. Personally, I'd rather see the "out of area" crops completely eliminated from the saveGame.

No it wouldn't or shouldn't show if not active but mods with scripts can cause issues even if they are not active. Without your log file it is hard to say why carrots are showing as an option

The categorisation seems to be a bit random

Well, I do believe that they can lift other pallets than vegetable pallets.. And since they are for the 3 point hitch and not front loader/tele handler etc they can be found in miscellaneous.

Is it necessary to roll carrots, parsnips,...? The PDA says yes, but the roller destroys the ridges.

It always says roll on all mine even on my grass fields but I never do.

Roll after cultivation and before ridging.
Running on 2 year old new old hardware that used to crash often.
