I've been getting the same issue. I'm using a DualSense controller and the camera randomly jumps to either straight up or down. I think the same issue existed in FS22 but it somehow seems worse now. Still no fix. I tried adjusting controller polling rate using third-party software (by default it can't be adjusted with regular PS5 controller, only Edge) all the way down to 125Hz and it did nothing. I wouldn't be surprised if it's some kind of input incompatibility with multiple devices. I'm playing on laptop so trackpad input is enabled. With all the mods I have, I need mouse and keyboard sometimes but use controller for driving.

That sounds exactly like Steam Input fighting with FS25's native controller support, not stick drift.

The Edge adds a touchpad, gyro, and two back paddles that an Xbox pad doesn't have. On PC, Steam usually maps those to extra buttons behind the scenes, and FS25 already has a bunch of camera snap binds (the quick 45°/90° and 180° flip actions, plus the LB+RB+D-pad reset). If Steam is also emulating an Xbox pad at the same time, one light touch on the pad or a paddle can fire a camera command instantly — which matches the "straight angle change" you're describing.

Worth checking, even if you haven't changed anything else:

Disable Steam Input just for FS25 — Library > Properties > Controller > Override > "Disable Steam Input", then restart. FS25 has had native DualSense support since 1.4/1.5, so you don't need the wrapper.
Clear the Edge's extra inputs — in the PlayStation Accessories app, make a profile where back buttons are unassigned, gyro is off, and touchpad click does nothing. The default Edge profile mirrors face buttons to the paddles.
Look in the hidden menu — FS25 puts controller camera sensitivity under Options > Controls > Device, and you can only see it from the main menu, not in-game. While you're there, unbind anything that shows up as "Touchpad" or "Paddle".
Test without camera mods — Quick Camera, CabCam Assist, etc. all add snap angles. If you run any, try vanilla first.
I haven't had an Edge to test myself, but this exact double-input thing comes up a lot when people switch from Xbox to DualSense on PC, and disabling Steam Input fixes it 90% of the time.

Let us know what controller API FS25 shows you (Steam vs Epic, wired vs BT) and if the snaps stop after step 1.
