Do we have to plow and sow grass in order to fertilizing having effect? Or is wildgrass just as good?

You cannot fertilize wild grass... or, I should say, it won't take. You can only fertilize fields. Field grass yields better than wild grass. Especially so when 100% fertilized. Note that you get one fertilization for free when you mow your grass. Don't worry about needs lime or needs plow conditions on grass fields (unless you are on some map that changes grass defaults), will not impact field grass yield.

Speaking of grass, why doesn't planted grass show as growing or ready to harvest on the map? Maybe a seasons question I guess?

It does if you turn the grass icon on in the crop menu

Standard the info isn't shown. Click the grass icon in the menu and it will start showing up.
With it on it can be kinda hard to make out your fields through the colour overlay for grass =P
