Im looking for a Uk (or Eu) based server to join.

Im a mature UK player, learning the game. Ive played FS since FS15 but usually get bored of playing on my own so end up stopping. Ive just got back into FS19 (after playing on console for a bit) but am now 100% a PC gamer and learning it all over again.

Ideally it would be a UK based map, (or EU) and somewhere I can join and buy a very small farm (like 1 med field or 2 small). Im no power gamer so ill just keep myself to myself most of the time unless called on. Id enjoy just seeing other farmers going about their business.

Does this type of server exist?

I'd encourage you to check out farmers only club (farmersonly.club). It's a newish multiplayer community and while most of the maps are maybe not what you're looking for, there's the opportunity to join in helping farm larger operations and after a couple of weeks you can apply for your own farm manager slot. After that it's up to you how much you want to buy and do really as long as you stay relatively active.
