Which Windoze OS Version for FS15/17 and Giant's Editor?

Hi all,
Long time Mac user currently running FS15 under Steam (which combination seriously limits my ability to edit maps, altho it can be done to a limited extent). Plans are simple -- run FS15/17 under Windows, edit maps with the Giants editor and, possibly, use something like Blender (if unable to source a Mac OS native equivalent).
Graphics (GraphicConverter 9), sound (Audacity), and xml text editing (TextWrangler) are accounted for on the Mac OS side. Am doing lots of texture fixes, stereo to mono conversions (and audio cleanup), as well as xml editing and bugfixes, in an effort to to increase frame rates, reduce mod conflicts, crashes, etc...; have learned a lot, but it's time to use the editor if I care to progress.
Am upgrading a Mac Pro for this purpose (6 core Intel Xeon processor @ 3.33Ghz, 16Gb ram @ 1.333Mhz DDR3, GTX 780, SSD drives...) and will be running Windows using BootCamp (native to the Intel processors in the Mac).
Considering the intended usage and system specs, which version of Windows do ya'll recommend? Any other advice?
