What version of software does it show for you all on Xbox? When I check mine in the Game management section it's showing as 1.0.0.14 I lost all my Mods and had to download them all again. This is a wellknown issue. I made several bug reports, but it's have never been fixed . The only solution is to use a display with support 120hz and AMD Freesync. I've been having similar issues on Series X too. I use very small amount of Mods but also face this when playing with no Mods. I find it happens more when tree's are around.
