I'm surprised how much they're allowed to rip up the ground so much while harvesting... or don't they have a choice, the harvest has to be done?

They probably don't have a choice. Around here where we have alot of wet falls, if the crops are ready and you can at least drive on the ground, it's go time. And there isn't an allowable limit of tearing up your field lol. It is just how badly you want to compact and possibly damage the soil. Doesn't make for fun times in the tractor with rutted up fields.
